Operational tasks

• Production of dishes taking HACCP/GHP into account
• Control of outgoing dishes for quality, quantity and presentation taking internal company specifications into account
• Monitoring, compliance and if necessary improvement of quality standards
• Management of the kitchen pass during service times (plating of dishes and leadership of employees)
• Ensuring the proper handling of machines and equipment
• Ensuring the implementation of the hygiene/safety concept in the à la carte or banquet kitchen
• Goods receipt control according to specifications

Administrative tasks

• Calculation and determination of prices for the kitchen offering in consultation with the Executive Chef
• Assistance with purchasing goods taking into account suitable suppliers, seasonality and supply/demand
• Managing the ordering process (ordering in the goods management system (Future Log))
• Assistance with the updating of hygiene/safety concepts
• Inventory management/inventories in cooperation with Cost Controlling

Miscellaneous

• Representation of the Sous Chef of Jack’s Brasserie in his absence
• Future-oriented thinking as well as use of media platforms (Food Trends) when developing new dishes or designing the menu offering
• Guest-oriented and economic offering planning

Employee Leadership/Talent Management

• Planning and conducting specialist employee training
• Ensuring compliance with regulations, internal company specifications such as employee handbook, LQA specifications
• Assistance in the supervision and training of apprentices and interns

• Apprenticeship completion as Koch EFZ as well as previous experience as Chef de Partie in high-end gastronomy/hospitality
