Chef de Partie - 1/2 Chef de Partie

We are looking for a: Chef de Partie - 1/2 Chef de Partie. Under the supervision of the Chef de Cuisine, you will be in charge of one of the components of the menu (fish, meat, sauces or entremets) and ensure the preparation and cooking of dishes according to the prevailing standards. Responsibilities: • Order, receive and check fresh goods according to the prevailing standards • Manage stocks • Prepare all culinary preparations assigned to your specialty/part according to the prevailing standards and the chef's instructions • Manage the tidiness, cleaning and hygiene of your station • Check the fridges and goods • Ensure the smooth running of the service • Develop an excellent knowledge of the menu • Excellent knowledge of cooking (vegetable cutting, seasoning, stocks, etc.) • Master different cooking methods • Excellent knowledge of HACCP hygiene standards Profile and experience: • CFC cook or equivalent training, BEP/CAP in cuisine or BTS Hospitality-restoration option B • Experience in Michelin-starred restaurants is essential • You have an eco-responsible sensitivity • You have good knowledge of products • Fluency in French is essential (as well as a good understanding of English) • You are an organized and rigorous person, flexible, open-minded, with a very good sense of relationships, able to work in a team and with a good sense of responsibility. You have a good ability to adapt, you are a reactive person and have a very good stress management.
