Head Chef

For our client located Head Chef (M/F) For our client located in Lausanne, we are looking for a Head Chef for a permanent position at 80%. Your main missions: Ensure the preparation and plating of dishes (tartare/ceviche specialties) in compliance with the brand's standards. Manage supplies, stocks and place orders with suppliers. Supervise, motivate and organize the work of the kitchen team (cooks, kitchen assistants, dishwashers). Guarantee strict compliance with hygiene and food safety standards (HACCP). Ensure the maintenance of kitchen profitability (management of ratios, control of losses). Your profile: Hold a CFC in cooking or training deemed equivalent Proven experience in a similar position as Head Chef or Sous Chef ready to evolve for at least 3 years. Perfect mastery of culinary techniques and HACCP standards. Sense of organization, rigor and excellent stress management.
