At Tsugi Bäckerei in Zürich, we are convinced that good bread arises from high-quality ingredients, time, artisanal skill, and care. Everything we offer, we produce ourselves – with a high standard for craftsmanship, consistent quality, and love for detail.

We are looking for an experienced personality for our bakery, who is highly knowledgeable about sourdough, high-hydration doughs, and viennoiserie and enjoys producing constantly excellent products.

What you bring with you:
– Sound knowledge in sourdough management and fermentation, including the care and management of sourdough cultures
– Experience in handling high-hydration doughs as well as confidence in assessing, scoring, and baking bread
– A pronounced understanding of baking processes, fermentation, oven management, and crust formation
– The ability to correctly assess the fermentation state of viennoiserie and to bake them at a high level
– Experience in laminating doughs and in the production of fine pastries
– A precise, careful, and detail-oriented way of working
– The ability to work efficiently and to reliably complete your tasks within the specified time
